Crock Pot Creamy Chicken Fajita Bowls

Ingredients for Crock Pot Creamy Chicken Fajita Bowls
- 2 lbs of boneless chicken
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2-1 lb of mushrooms, sliced
- 14-16oz can of crushed tomatoes, undrained
- 1 medium onion, sliced
- 8oz of cream cheese – cubed
- 2 packets of fajita seasoning
- Optional: shredded cheddar cheese and lemon or lime
- Rice or mashed potatoes, prepared
How To Make Creamy Chicken Fajita Bowls in a Crock Pot
- Add the chicken, peppers and onions to your 6-quart crock pot (I used my Programmable Travel Crock Pot since I made these while we were on vacation.)
- Combine your tomatoes and fajita seasoning and pour on top of your ingredients already in your crock pot
- Top with your cream cheese cubes
- Cover and cook on low for around 6 hours, stirring around the 5 hour mark
- Serve over mashed potatoes or rice and, if desired, sprinkle with some cheese and add little squeeze of lemon or lime

- You can decide how many mushrooms you want in this yummy recipe. If you want it to be a heartier meal, the mushrooms can really beef it up.
- The size of can of tomatoes you use will determine if this is a thicker or thinner consistency. If you would like it thicker, use the smaller can of tomatoes. If you would like a thinner consistency, use the larger can of tomatoes.

It was good. I’d put the put the peppers in a little later than the recipe says. They pretty much turn to mush otherwise.
