Instructions
Add the chicken, peppers and onions to your 6-quart crock pot (I used my Programmable Travel Crock Pot since I made these while we were on vacation.)
Combine your tomatoes and fajita seasoning and pour on top of your ingredients already in your crock pot
Top with your cream cheese cubes
Cover and cook on low for around 6 hours, stirring around the 5 hour mark
Serve over mashed potatoes or rice and, if desired, sprinkle with some cheese and add little squeeze of lemon or lime

You can decide how many mushrooms you want in this yummy recipe. If you want it to be a heartier meal, the mushrooms can really beef it up.
The size of can of tomatoes you use will determine if this is a thicker or thinner consistency. If you would like it thicker, use the smaller can of tomatoes. If you would like a thinner consistency, use the larger can of tomatoes.
