This Crock Pot Beefy Burrito Casserole for Two was the first recipe I made in my 2.5 Quart Small Casserole Crock Pot, and I have to say that I am loving this little crock pot. It is great for making casseroles with fewer servings and was perfect for this recipe. If you don’t have one already, you can also make this in a regular style 2.5 quart to 4 quart slow cooker.

While this recipe comes together really quickly and cooks in an hour or less, you can actually make it even faster if you are running short on time when you are prepping it. You can use our Make Ahead Ground Beef Recipe and not have to worry about cooking your ground beef when throwing this together. You can have it already thawed in your fridge.

What You Will Need for Crock Pot Beefy Burrito Casserole for Two

Ingredients Needed

  • 1/2 lb ground beef
  • 2 tablespoons chopped onion
  • 1/2 clove garlic, minced
  • 2/3 cup cheddar cheese soup
  • 1 cup refried beans
  • 1/2 cup Mexican style cheese
  • Tortillas
  • Your favorite burrito toppings

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 50 minutes to 1 hour on low, rotating your insert halfway through cooking if your slow cooker does not cook evenly

    Ingredients

    Instructions

    • Brown your ground beef with your onion and garlic and drain.
    • Mix together your beans and soup first, then add in your ground beef and stir until well combined.
    • Pour mixture into a slightly greased 2.5 Quart Casserole Crock Pot, 2.5 Quart Crock Pot, 3 Quart Crock Pot or 4 Quart Crock Pot.
    • Top with your shredded cheese
    • Cover and cook on low for 50 minutes to 1 hour, until your cheese is melted. (Rotate your insert halfway through cooking if your slow cooker does not cook evenly.)
    • Serve on tortilla shells with your favorite burrito toppings.
