How to Make Beefy Burrito Casserole for Two in a Crock Pot
Aunt Lou here.
This Crock Pot Beefy Burrito Casserole for Two was the first recipe I made in my 2.5 Quart Small Casserole Crock Pot, and I have to say that I am loving this little crock pot. It is great for making casseroles with fewer servings and was perfect for this recipe. If you don’t have one already, you can also make this in a regular style 2.5 quart to 4 quart slow cooker.
While this recipe comes together really quickly and cooks in an hour or less, you can actually make it even faster if you are running short on time when you are prepping it. You can use our Make Ahead Ground Beef Recipe and not have to worry about cooking your ground beef when throwing this together. You can have it already thawed in your fridge.
(Psst…if you like the sound of this recipe but need to serve more people, you can find the original recipe with more servings here.)
