Place 3 lbs baby back ribs on a parchment lined baking sheet with sides, sprinkle them with Salt and Pepper to taste and bake for 30 minutes.
Cut 1 white onion into quarters and set aside.
Mix together 16 oz jar apple butter and 18 oz bottle bbq sauce and set aside.
Cut ribs into serving size pieces and place into a 6 quart crock pot.
Place onion quarters on top of ribs and drizzle the sauce mixture over everything.
Cover and cook on low for 6 to 8 hours.
Remove ribs with a flipping spatula and wooden spoon (this helps them not fall apart) and serve with extra sauce from the crock pot spooned on top.
