Place 2 lbs boneless pork (cut into bite size pieces) in the bottom of your 4 quart crock pot.
In a medium size bowl, mix together 1/2 cup honey, 1/4 cup brown sugar, 1/2 cup ketchup, 3 tablespoons Low Sodium Soy Sauce and 4 cloves garlic until well blended.
Pour the sauce over the cubed pork.
Cover and cook on low for 2-4 hours or on high for 1-2 hours, until the center of the pieces of pork are at least 145 degrees Fahrenheit. (If making long cooking rice, start cooking your rice towards the end of your slow cooker cooking time.)
Turn your slow cooker off, put a colander over a saucepan and pour the contents of the insert through the colander and return the cubed pork back to your slow cooker insert and cover.
In a small bowl or coffee cup, mix together 1 tablespoon corn starch and 1 tablespoon cold water until completely blended and stir into the sauce in the saucepan.
Heat over medium high heat until it is at a rolling boil (about 3 minutes), reduce heat and cook at a simmer, stirring continually, until it is just a little thinner than you want it. (It will thicken as it cools.)
Pour the thickened sauce over the top of the pork and serve over a bed of Cooked white rice.
