Heat 1 tablespoon extra virgin olive oil over medium high heat in a skillet.
Mix together 1/3 cup all purpose flour, 1/3 cup fresh grated parmesan cheese and Salt and Pepper to taste in a shallow bowl and dredge the 2.5 lbs boneless skinless chicken thighs in the flour mixture.
Brown the coated chicken on each side for 4-5 minutes.
Place the browned chicken in a 6 Quart Crock Pot.
Mix together 4 teaspoons minced garlic, 1 cup chicken broth, 1 1/2 cups half and half and 1 cup fresh grated parmesan cheese in a bowl and pour over the chicken.
Cover and cook for 1.5-2.5 hours on high, stirring sauce occasionally, until chicken reaches an internal temperature of at least 165 degrees Fahrenheit.
Serve chicken with sauce spooned over top.
