Place your potatoes in the bottom of your 6 quart crock pot
Put your pork loin on top of the bed of potatoes and surround with carrots and onion
Spoon your soup over top
Sprinkle your gravy mix evenly over everything
Pour your water over the top of everything
Cover and cook on low for 6-8 hours on low (Cooking on low will provide you with the most tender meat. However, if you must cook on high, it will be for 3-4 hours.) If desired, flip pork loin over with a meat fork with about 2 hours of cooking left.
Remove your pork loin from your crock pot, place in a serving dish, give your gravy a good stir and add your veggies and gravy to your serving dish
