Melt 2 tablespoons of butter in a skillet over medium/high heat.
Brown all of your chicken, about 3 minutes on each side.
Place your browned chicken in a 2.5 quart baking dish, pouring the remaining butter/cooking juices over top.
Using a mixer, combine your remaining ingredients and spoon over the top of your chicken
Cook for 25-30 minutes, until your chicken reaches safe internal cooking temperature and the top is slightly golden and bubbly
Let your chicken rest for about 5-10 minutes before placing each piece of chicken on plates for serving, stirring the sauce and ladling the sauce over each serving

If you prefer to use chicken breasts, cut them into thigh sized pieces to keep the cooking time similar.
