How to Make Low Carb Saucy Chicken in an Oven

We love providing our readers with different options for fixing some of our favorite recipes. This Low Carb Saucy Chicken is the oven version of our reader favorite (and one of my family’s favorites too) recipes. So not matter if you do not have an oven available and want to crock this recipe, or if you are low on time and want to throw this in the oven, you can have this delicious recipe!
I used chicken thighs. We are a dark meat loving family, but I know many of our readers love light meat. If you would prefer to use chicken breasts, just cut them into thigh size pieces so they cooking time will remain similar.
The sauce will become golden on top and bubbly around the edges as it nears being done. Once your chicken is done and has rested for 5-10 minutes, you will place the chicken on plates to serve and stir up the sauce. When it is all mixed together, it thickens up the sauce a bit. There is plenty of sauce, so feel free to ladle up as much as you want on each serving!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken thighs
- 1/2 cup butter divided
- 1 tablespoon garlic powder
- 2 teaspoons garlic salt
- 1 teaspoon onion powder
- 1/2 teaspoon pepper
- 1 teaspoon parsley flakes
- 1 teaspoon dried cilantro leaves
- 1/4 teaspoon ground red pepper
- 1 cup heavy whipping cream
- 1.5 cups Shredded Parmesan
- 8 oz cream cheese softened
Equipment Needed
- Butter knife
- Measuring spoons
- Measuring cups
- Cheese shredder/grater (You will need this if you prefer to have fresh shredded Parmesan.)
- Medium to large mixing bowl and mixer or stand mixer
- Skillet
- Tongs or flipping spatula
- 2.5 quart baking dish
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 25 to 30 minutes, until your chicken reaches safe internal cooking temperature (You can find a chart of all safe internal cooking temperatures here.)

Low Carb Saucy Chicken
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1/2 cup butter divided
- 1 tablespoon garlic powder
- 2 teaspoons garlic salt
- 1 teaspoon onion powder
- 1 teaspoon parsley flakes
- 1 teaspoon dried cilantro leaves
- 1/2 teaspoon pepper
- 1/4 teaspoon ground red pepper
- 1 cup heavy whipping cream
- 1.5 cups Shredded Parmesan
- 8 oz cream cheese softened
Instructions
- Preheat your oven to 425
- Melt 2 tablespoons of butter in a skillet over medium/high heat.
- Brown all of your chicken, about 3 minutes on each side.
- Using a mixer, combine your remaining ingredients and spoon over the top of your chicken
- Cook for 25-30 minutes, until your chicken reaches safe internal cooking temperature and the top is slightly golden and bubbly
- Let your chicken rest for about 5-10 minutes before placing each piece of chicken on plates for serving, stirring the sauce and ladling the sauce over each serving
Notes
- If you prefer to use chicken breasts, cut them into thigh sized pieces to keep the cooking time similar.
