2mediumSweet Potatoespeeled and cut into medium chunks
1tablespoonextra virgin olive oil
1.5tablespoonsmaple syrupplus more for garnish, if desired
1/8teaspoonground black pepper
Mix together all your ingredients, except your sweet potatoes in a medium bowl.
Place your sweet potato chunks in a large bowl and drizzle maple syrup mixture over the sweet potatoes.
Take 2 wooden spoons and gently toss your sweet potatoes until all are well coated
Place a piece of parchment paper in the bottom of your casserole crock pot or 6 quart crock pot.
Spread coated sweet potato chunks evenly on the parchment paper.
Cover and cook on low for 4-6 hours or high for 2-3 hours, they are done when sweet potatoes reach desired tenderness.
If desired, serve with a drizzling of maple syrup.
