How to Make Maple Cinnamon Sweet Potatoes in a Crock Pot

I was looking for recipe ideas the other day and came across this recipe for Maple Glazed Squash. While I do not have any squash handy this time of year, I thought it sounded it would be delicious with sweet potatoes too. I was quite right too! These Maple Cinnamon Crock Pot Sweet Potatoes are so delicious!
I am a huge fan of sweet potatoes. I love getting them as a side at a steak house or having sweet potato casserole at a holiday dinner. I thought this recipe would be a great way to have some yummy sweet potatoes when I just want a few servings with a great flavor and little prep work!
If you have a larger group of people to feed and want to double or triple this recipe, a 6 quart or 8 quart slow cooker would probably be able to do it. However, it will change the cooking time, and if your sweet potato pieces are not in one layer, I would recommend stirring it occasionally.
What You Will Need
Ingredients Needed
- 2 medium sweet potatoes, peeled and cut into medium chunks
- 1 tablespoon extra virgin olive oil
- 1.5 tablespoons maple syrup (plus more for garnish, if desired)
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon salt
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Medium bowl
- Stirring spatula
- Large bowl
- 2 wooden spoons
- Parchment paper
- Casserole Crock Pot or 6 quart crock pot
Time Needed
- Prep Time: 7 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high

Maple Cinnamon Crock Pot Sweet Potatoes
Ingredients
- 2 medium Sweet Potatoes peeled and cut into medium chunks
- 1 tablespoon extra virgin olive oil
- 1.5 tablespoons maple syrup plus more for garnish, if desired
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Mix together all your ingredients, except your sweet potatoes in a medium bowl.
- Place your sweet potato chunks in a large bowl and drizzle maple syrup mixture over the sweet potatoes.
- Take 2 wooden spoons and gently toss your sweet potatoes until all are well coated
- Place a piece of parchment paper in the bottom of your casserole crock pot or 6 quart crock pot.
- Spread coated sweet potato chunks evenly on the parchment paper.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, they are done when sweet potatoes reach desired tenderness.
- If desired, serve with a drizzling of maple syrup.
