These Crock Pot Herb Potatoes are super simple to make with herbs you most likely have already in your spice rack! They are easy to put together, but flavorful!
In a small bowl, mix together everything except your potatoes.
Place your potatoes in a large bowl and pour the oil mixture over your potatoes.
Take two wooden spoons and gently toss your potatoes in the oil mixture until evenly coated.
Pour the potatoes and oil mixture into a 2.5 quart slow cooker.
Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring gently once or twice.
Serve with a slotted spoon.
