These Crock Pot Herb Potatoes are super simple to make with herbs you most likely have already in your spice rack! They are easy to put together, but flavorful!

How to Make Herb Potatoes in a Crock Pot

Confession time. There are times (many times to be perfectly honest) that I do not plan ahead for meals. Gasp! As many years as I have been a wife and mother, I should probably be better at meal planning than I am. Alas, I am not. I am guessing though that if it is a problem for me at times, it is for others as well. So, I like making recipes that can be made with what I have in the house without a special trip to the store. While I know that everyone keeps different things in their kitchen, I think the ingredients for this Crock Pot Herb Potatoes recipe are (hopefully) items that most people keep in their cabinets or spice rack!
Make sure that you gently stir your potatoes at least once halfway through cooking. This will give the potatoes away from the sides of your insert have a chance to change out with the potatoes that have been resting against the hot insert. That way, you won’t have overly cooked potatoes in the bottom when the top potatoes get done. Easy peasy and oh so delicious!

Ingredients Needed
- 3 large potatoes, cut into large pieces
- 3/4 cup extra virgin olive oil
- 1/4 teaspoon dried parsley flakes
- 3 cloves garlic, minced
- 1/4 teaspoon dried thyme leaves
- 1 teaspoon dried Rosemary leaves
- 1/4 teaspoon dried basil leaves
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cup
- Measuring spoons
- Garlic press
- Small bowl
- Stirring spatula
- Large bowl
- 2 wooden spoons
- 2 1/2 quart crock pot
- Slotted spoon for serving
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high

Crock Pot Herb Potatoes
Ingredients
- 3 large Russet Potatoes cut into large pieces
- 3/4 cup extra virgin olive oil
- 3 cloves garlic minced
- 1/4 teaspoon parsley flakes
- 1/4 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 teaspoon dried basil
Instructions
- In a small bowl, mix together everything except your potatoes.
- Place your potatoes in a large bowl and pour the oil mixture over your potatoes.
- Take two wooden spoons and gently toss your potatoes in the oil mixture until evenly coated.
- Pour the potatoes and oil mixture into a 2.5 quart slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring gently once or twice.
- Serve with a slotted spoon.
