How to Make Pepper Jack Mac ‘n Cheese in a Crock Pot

I love taking a favorite dish and making something new and different from it. That is exactly what I have done with this Pepper Jack Crock Pot Mac ‘n Cheese recipe. It takes mac and cheese to the next level with a little kick from the pepper jack cheese. My family loved it!
As most of you know, I am a wimp when it comes to spiciness. My husband, who is all about the heat, did not think this recipe was spicy. However, I could taste the kick from the pepper jack cheese. It was not overwhelming or a 5 alarm type spiciness, but I could feel the heat. That being said, I still enjoyed a small portion of this yummy side dish.
The cooking time on this one, like any of our recipes, needs to be tested on your particular slow cooker. I mention it specific recipe because of the short cooking time on low. I know there are some slow cookers that will not even be close to melting the cheese by the hour mark. However, there are other slow cooker, like my 2.5 quart crock pot, that cook extremely hot and will have this recipe done in an hour. Please keep an eye on it the first time you make this recipe so you can know how your unit cooks this recipe.
What You Will Need
Ingredients Needed
- 8 oz uncooked elbow macaroni, cooked al dente
- 2 tablespoons butter, sliced
- 1 cup shredded mozzarella cheese
- 12 oz evaporated milk
- 6 oz package pepper jack cheese slices, torn into small pieces
- 1/2 cup sour cream
Equipment Needed
- Medium saucepan
- Wooden spoon
- Colander or strainer (I love my on-pot strainer.)
- Butter knife
- Measuring cup
- Can opener
- 2.5 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1 to 2 hours on low, stirring occasionally

Ingredients
- 8 oz uncooked macaroni cooked al dente
