How to Make Pepper Jack Potatoes in a Crock Pot

When Cris suggested I try making these Crock Pot Pepper Jack Potatoes, I was not sure what direction I was going to go. All I knew was the recipe was going to have potatoes and Pepper Jack cheese. So, I started digging around my fridge and cabinets, and came up with this recipe. Since I am a wimp when it comes to spicy foods, I was a bit concerned this might be too “hot” for me, but was pleasantly surprised when I took a bite! There is a delicious flavor, but not an overwhelming spiciness! Win win!
If you are looking for a creamy cheesy potatoes recipe, this is not it. However, that does not mean this recipe isn’t worth trying. These potatoes are actually pretty amazing. The butter, sour cream, milk and cheese all come together to give you a rich, full flavor that is tasty, but not so over the top rich that you can only have a bite or two. These potatoes would be a great side dish for beef, chicken or pork! They are so yummy!
What You Will Need
Ingredients Needed
- 4 medium potatoes, peeled and sliced, divided
- 1/2 cup sour cream, divided
- 4 tablespoons butter, sliced, divided
- 6 slices pepper jack cheese, divided
- 1/2 teaspoon garlic salt, divided
- 1 cup milk
Equipment Needed
- Sharp knife and cutting board OR vegetable peeler and vegetable slicer
- Butter knife
- Measuring cups
- Wooden spoon or stirring spatula
- 4 quart slow cooker
Time Needed
- Prep Time: 7 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high (You will want to turn your insert halfway through cooking if your crock pot does not cook evenly.)

Crock Pot Pepper Jack Potatoes
Ingredients
- 4 medium Russet Potatoes peeled and sliced, divided
- 1/2 cup sour cream divided
- 4 tablespoons butter sliced, divided
- 6 slices Pepper Jack Cheese divided
- 1/2 teaspoon garlic salt divided
- 1 cup milk
Instructions
- Spread out half of your potatoes in the bottom of a 4 quart slow cooker.
- Top your potatoes with half your sour cream, half your sliced butter, half your garlic salt and half your cheese slices. (Break cheese slices into pieces so that most of your potatoes are covered with your cheese slices overlapping as little as possible.)
- Repeat layers.
- Pour your milk all around your layers.
- Cover and cook on low 4-6 hours or high for 2-3 hours, turning your insert halfway through cooking if your unit does not cook evenly.
- Gently stir your potatoes and sauce until the sauce is well combined before serving.
