Ingredients Needed

  • 4 potatoes, cubed small
  • 1/2 cup sour cream
  • 1/4 cup butter, softened and sliced
  • 1/2 cup cream cheese, half of an 8 oz block, softened
  • 2 cloves minced garlic
  • 1/4 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 4 pieces of bacon, cooked crisp and crumbled

Equipment Needed

  • Potato peeler (You will need this if you are like me and unable to peel a potato with a knife without butchering it. If you are like Momma and can peel a potato with a knife like a pro, then you will not need this.)
  • Sharp knife
  • Cutting board
  • Small bowl
  • Fork (for combining your ingredients in your small bowl)
  • Measuring cups
  • Garlic press
  • Skillet, griddle or microwavable bacon rack
  • 4 quart slow cooker

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 5 to 6 hours on low or 2.5 to 3 hours on high

  • Place your cubed potatoes in the bottom of a lightly greased 4 quart slow cooker
  • In a small bowl, mix together sour cream, cream cheese, butter and garlic with a fork until well combined
  • Pour chicken broth over potatoes
  • Spread cream cheese mixture over potatoes
  • Sprinkle cheese on top
  • Top with crumbled bacon
  • Cover and cook on low for 5-6 hours or on high for 2.5-3 hours
