How to Make Fiesta Chicken Casserole in a Crock Pot

So, I recently made our Fiesta Crock Pot Beef Casserole and it had my family fighting over the leftovers. That got me to thinking…what if I tried this out with chicken. We love chicken, and we love the original recipe, so I thought it had to be a hit, and boy was I right! Yum!
This casserole has a lot of liquid in it, even with the step for you to drain the beans, so I usually serve it up with a spoon over my crushed Doritos. It all comes together beautifully and is so incredibly delicious. This is one of the few recipes where my kiddos will eat tomatoes and beans without complaining once. They love it (and so does their Momma and their Daddy!). I hope you and your family enjoy this recipe as much as my family does!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken, cut into bite size pieces
- 1/2 teaspoon garlic salt
- oil, enough to thinly cover the bottom of your skillet
- 1 small onion diced
- 15 oz can black beans drained, but not rinsed
- 1 cup Salsa
- 3/4 teaspoon garlic powder
- 10.5 oz can cream of chicken soup
- 10 oz can diced tomatoes with green chiles
- 2 cups Mexican Blend Shredded Cheese divided
- Doritos
Equipment Needed
- Skillet and strainer (I love my on pot strainer)
- Sharp knife
- Cutting board
- Can opener
- Measuring cups
- Measuring spoons
- Medium bowl
- 4 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 3-4 hours on low or 1-2 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

Fiesta Crock Pot Chicken Casserole
Ingredients
- 2 lbs boneless skinless chicken cut into bite size pieces
- 1/2 teaspoon garlic salt
- Oil enough to thinly cover the bottom of your skillet
- 1 small onion diced
- 15 oz can black beans drained, but not rinsed
- 1 cup Salsa
- 3/4 teaspoon garlic powder
- 10.5 oz can cream of chicken soup
- 10 oz can diced tomatoes with green chiles
- 2 cups Mexican Blend Shredded Cheese divided
- Doritos
Instructions
- Heat your oil in a skillet over medium high heat and cook your chicken pieces with your onion and garlic salt and drain
- Combine your cooked chicken, black beans, salsa, garlic powder, soup, tomatoes and 1/2 cup of shredded cheese
- Spread your mixture in a lightly greased 6 quart slow cooker
- Top with remaining cheese
- Cover and cook on low for 3-4 hours or high for 1-2 hours, turning your insert halfway through if your slow cooker does not cook evenly
- Serve hot over a bed of crushed Doritos, if desired
