How to Make Spaghetti Casserole in a Casserole Crock Pot

This casserole is currently my family’s favorite meal to request which is a little funny because I created it originally to try and salvage a total flop. I had accidentally overcooked my pasta (which is REALLY easy to do with low carb pasta, especially low carb spaghetti) and I was trying to save it because low carb pasta ain’t cheap! So I decided to make a flavorful casserole to hopefully hide the fact that my spaghetti was a bit on the mushy side. That night at dinner, everyone RAVED about the casserole, so I knew I needed to test it again with properly cooked spaghetti. And, ever since, the family literally cheers anytime they find out that Crock Pot Spaghetti Casserole is on the menu!
Making this Casserole Low Carb
- This is our favorite low carb spaghetti. We have tried other brands but we do not recommend. You can undercook your spaghetti a bit because it will continue to cook in the casserole. Note it is VERY easy to overcook low carb spaghetti.
- Pasta sauce choice will impact carb counts significantly in this dish. We use this low carb marinara.
Crock Pot Spaghetti Casserole Notes
- We have tested this recipe in both the Casserole Crock and a traditional 6 quart slow cooker. This recipe works well in both. I prefer the casserole crock for dividing into even portions.
- This is a great recipe to use Make Ahead Ground Beef to make meal prep quick. Here is the Crock Pot Version. Here is the Instant Pot Version.
- We used low carb spaghetti and low carb pasta sauce. You can use your favorite brand.
- It is best to undercook your spaghetti a little bit as it will continue to cook in the casserole. This will help the pasta retain its shape.
- We use these tools to zest (Microplane ) and juice (Juicer) our lemon.
- You can use any Italian seasoning you find at your grocery store. We have used this one and this pizza seasoning. Note that many seasonings contain pepper, so you may want to adjust how much you add depending on heat desired.
- We used whole milk ricotta. We prefer it in this dish, but you can use your preferred ricotta.

Crock Pot Spaghetti Casserole
Ingredients
Spaghetti Layer
- 2 lbs Browned Ground Beef seasoned to taste
- 8 oz Canned Mushrooms drained
- 24 oz Marinara Sauce
- 8 oz cooked spaghetti we used low carb pasta
Ricotta Layer
- 1 lemon zest and juice
- 1 tsp Italian Seasoning
- 15 oz Whole Milk Ricotta
Mozzarella Layer
- 3 cups Shredded Mozzarella Cheese
Instructions
- Combine all the spaghetti layer ingredients and place inside your crock pot.
- In a medium bowl, mix together ricotta layer ingredients and spread on top of spaghetti layer.
- Cover evenly with the mozzarella cheese.
- Cook on high for 2 hours or until the cheese melts and the edges are bubbly.
