Beat together cream cheese, pimento cheese spread and mayo (or yogurt) with a hand mixer in a bowl or your 4 quart slow cooker (if you have a crock insert and not a non-stick insert) or in a stand mixer.
Add remaining ingredients, except tortilla chips and crackers, reserving a little bacon to top with at the end.
If you mixed this in a bowl, spoon the mixture into a 4 quart slow cooker.
Cook on low for 3 hours or until hot and smooth, stirring once or twice with a stirring spatula so the cheese does not stick to your insert.
Garnish with reserved bacon.
Serve with tortilla chips and crackers.
