How to Make Bacon Pimento Cheese Dip in a Crock Pot

The other day Cris told me of an idea she had for a dip. She said that she thought her Bacon Double Cheese Dip would be good if you replace one of the cheeses with pimento cheese. Now, to be honest, this picky eater wasn’t too sure about it. I have never had pimento cheese in my life…again, very picky eater here. Michael was really excited though, so I made it and tried it. Oh my word. I don’t know if I like pimento cheese on its own, but I can tell you I love this Crock Pot Bacon Pimento Cheese Dip.
If you are short on time when you are going to be putting this together, you can cook your bacon ahead of time. You will just want to make sure it is cooked very crisply so you can crumble it easily even when it is cold from being in the refrigerator. If you cook your bacon ahead of time, you can throw this recipe together in about 5 minutes.
What You Will Need for Crock Pot Bacon Pimento Cheese Dip
Ingredients Needed
- 8 slices bacon, cooked crispy and crumbled
- 16 oz cream cheese, softened (2 – 8 oz blocks)
- 1 cup mayo or plain Greek yogurt
- 8 oz Pimento cheese spread
- 8 oz bag shredded mild cheddar cheese
- 2 green onions, finely chopped
- Tortilla chips or crackers, for serving
Equipment Needed
- Skillet or griddle
- Sharp knife
- Cutting board
- Measuring cups
- Hand mixer or stand mixer
- Stirring spatula
- 4 quart slow cooker
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 3 hours on low, stirring once or twice with a stirring spatula to keep the cream cheese from sticking to the insert

Crock Pot Bacon Pimento Cheese Dip
Ingredients
- 8 slices of bacon chopped and cooked crispy
- 16 oz cream cheese (2 – 8oz bricks) softened
- 1 cup mayo or plain Greek yogurt
- 8 oz shredded mild Cheddar cheese
- 8 oz Pimento cheese spread
- 2 green onions finely chopped
- Tortilla chips or crackers
Instructions
- Add remaining ingredients, except tortilla chips and crackers, reserving a little bacon to top with at the end.
- If you mixed this in a bowl, spoon the mixture into a 4 quart slow cooker.
- Cook on low for 3 hours or until hot and smooth, stirring once or twice with a stirring spatula so the cheese does not stick to your insert.
- Garnish with reserved bacon.
- Serve with tortilla chips and crackers.
