How to Make Low Carb Bacon Cheesy Chicken Dip in a Crock Pot

Years ago, I made a Bacon Cheeseburger Crock Pot Dip. Over the years, it has not only become a reader favorite, but also a family favorite. The other day, I was thinking on new recipe ideas and could not believe I had not tried the recipe with chicken! So, now you have this amazing Low Carb Crock Pot Bacon Cheesy Chicken Dip recipe! It is so incredibly delicious!
The bacon bits we use in this recipe are the real bits of bacon. I like using these as a quick way to get yummy bacon in a recipe without taking the time to cook bacon.
This is a great dip to take to a get together with family or friends. As with any cheese dip, you will want to make sure you stir it occasionally as it cooks and while on warm at the party. Otherwise, you will end up with burned cheese around the edges and on the bottom. This is not fun to eat or clean up, but easily avoidable! Just stir every once in a while. Easy peasy!
What You Will Need
Ingredients Needed
- 1 lb chicken, cut into bite size pieces
- 2 tablespoons extra virgin olive oil
- 8 oz package of cream cheese, softened and cubed
- 2 cups shredded cheddar cheese
- 10 oz can of diced tomatoes with green chiles
- 6 oz package of real bacon bits, divided (We use the ones that have the smoked hickory flavor and are amazing!)
- 1 teaspoons dried parsley
- assorted dippers
Equipment Needed
- Sharp knife
- Cutting board
- Skillet
- Measuring spoons
- Measuring cup
- Wooden spoon
- 2.5 quart crock pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 2 to 3 hours on low, stirring occasionally

Low Carb Crock Pot Bacon Cheesy Chicken Dip
Ingredients
- 1 lb chicken cut into bite size pieces
- 2 tablespoons extra virgin olive oil
- 8 oz package of cream cheese cubed
- 2 cups shredded cheddar cheese
- 10 oz can diced tomatoes with green chiles
- 6 oz package of real bacon bits divided
- 1 teaspoon dried parsley
- assorted dippers
Instructions
- Heat the oil in a large skillet and cook chicken pieces
- Drain chicken and place in a large skillet
- Over low heat, stir in cheeses, Red Gold tomatoes along with their juices and all of the bacon bits except for 2 tablespoons (set these aside for garnish at the end)
- Cook while stirring frequently until everything is heated through and well blended
- Pour mixture into a 2.5 quart crock pot
- Cover and cook on low for 2-3 hours stirring occasionally
- Stir in parsley and sprinkle with remaining bacon bits just before serving
