How to Make Creamy Nacho Chicken Dip in a Slow Cooker

This recipe is an adaptation of our Crock Pot Nacho Chicken Dip that reader RC asked about. Thank you RC for the wonderful recommendation! We love it!

When I added the cream cheese layer, I had already smoothed out the cream cheese in the bowl and then just plopped it on one spoonful at a time…think like putting dollops of icing across the top of a cake. Then smooth it out as best you can without mixing it in too much with the refried beans. It doesn’t have to be perfect.

Whether for a potluck (or pitch-in if you are from Southern Indiana 😉 ), tailgate party, game day party at your house, family reunion or party just because you want to have a party, this Creamy Crock Pot Nacho Chicken Dip is sure to please! The best part is that it doesn’t take hardly any work at all! Everyone at the party is going to love it (including you)!

In times where gatherings are not recommended or when the grocery stores are not always stocked, you probably don’t want to make a recipe that is just a dip. That’s where the tortillas come in to play! This recipe has it all! Beans, cream cheese, chicken, salsa and cheese! It is like having the filling of a taco already put together! Just throw it in a shell.

Ingredients

  • 16 oz can refried beans
  • 8 oz cream cheese softened
  • 12 oz can chicken drained and shredded
  • 16 oz jar chunky salsa
  • 8 oz shredded Mexican-blend cheese
  • tortilla chips or tortillas

Instructions

  • Spray your 4-quart crock pot with cooking spray.
  • In a small bowl, smush and stir your cream cheese until it is smooth
  • Layer your ingredients in this order: beans, cream cheese, chicken, salsa, cheese.
  • Cover and cook on high for 1 hour or low for 2 hours.
  • Serve either on top of chips, with chips as a dip or on a tortilla

    Hello there! Love the website and all of your recipes. I noticed that the serving bowl that you used for the tortilla is a Currier and Ives bowl. The reason I know this is because I have my late Grandmother’s entire set. My late Mother purchased the set for her, piece by piece, in the late fifties from the grocery store. I believe you had to spend a certain amount and then were able to purchase the pieces at a reduced price. Just wondering what the history is of your bowl. Hope you and yours are doing well in this crazy time.

      We have been collecting both Currier and Ives as well as Johnson Brothers dishes for years. The ones pictured in this post were purchased from someone selling their collection that they had been collecting for decades. We began collecting them because they reminded us of our grandma. However, while I do have some of Grandma’s wheat dishes, I did do not have any of her other dishes, so I started my own collection in honor of her. We are all doing well during this time. Thanks so much for taking the time to leave us a note!

    I don’t have refried beans, i have kidney beans and black beans. Can I use those?

      Hi Emily!

      I haven’t tried this with other beans, but I think the black beans would work well with the flavors of the recipe. I would drain them and smash them a bit to keep with the same texture of the original recipe. If you give it a try, let me know how it turns out!
