Put your potato cubes, 1/4 teaspoon of salt and dried minced onion in your 6 quart slow cooker.
Add enough water to cover your potatoes.
Cover and cook on low for 4-5 hours or high for 2-2.5 hours. Watch closely to see when your potatoes are fork tender.
Drain your potatoes into a large colander and set aside.
Add all your remaining ingredients to your 6 quart crock pot and stir until well combined.
Stir in your cooked potatoes and cook on high for additional 15-30 minutes, stirring as needed, until your cheese is melted and mixes in.
