Place brown sugar in the bottom of a shallow bowl, set aside.
Line a large baking sheet with aluminum foil (for easy clean up), place an oven safe cooling rack on top of the aluminum foil and set aside.
Cut your chicken breasts into bite size pieces (I cut my chicken into 40 pieces because my package of bacon had 20 slices, which I cut in half, giving me 40 pieces of bacon to use. You can count your pieces of bacon and cut your chicken so you have just the right amount of chicken pieces to be wrapped by your half slices of bacon.)
Wrap one half piece of bacon around a piece of chicken, roll it in the brown sugar until it is well coated and place it on the rack. Repeat this for all of your pieces of chicken and bacon.
Bake at 350 for 40 to 45 minutes, flipping your bacon wrapped chicken bites halfway through cooking time, until they have reached desired crispiness.
