How to Make Bacon Wrapped Chicken Bites in an Oven

Aunt Lou here.

My family members were huge fans of the Crock Pot Bacon Wrapped Chicken Bites I made a while back. So, when some of our readers started asking how to convert the crock pot recipe to an oven recipe, I knew my family would not complain one bit if I gave it a try. We all loved these delicious morsels! They are great as a fun appetizer or as a main dish when you make some yummy side dishes to goes along with them.

To make putting these chicken bites together easier, I set up a little assembly line on my counter. I had my cutting board and sharp knife first with the bacon I had sliced in half next. Next in line was my shallow bowl with the brown sugar, and last in line was my foil covered baking sheet with oven safe cooling rack on top. I would take one chicken breast at a time, and cut it into pieces. Then I would take those pieces one by one and go down the assembly line. It made the prep for this recipe go smoothly.

Ingredients

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Cut your bacon slices in half, set aside.
  • Place brown sugar in the bottom of a shallow bowl, set aside.
  • Line a large baking sheet with aluminum foil (for easy clean up), place an oven safe cooling rack on top of the aluminum foil and set aside.
  • Cut your chicken breasts into bite size pieces (I cut my chicken into 40 pieces because my package of bacon had 20 slices, which I cut in half, giving me 40 pieces of bacon to use. You can count your pieces of bacon and cut your chicken so you have just the right amount of chicken pieces to be wrapped by your half slices of bacon.)
  • Wrap one half piece of bacon around a piece of chicken, roll it in the brown sugar until it is well coated and place it on the rack. Repeat this for all of your pieces of chicken and bacon.
  • Bake at 350 for 40 to 45 minutes, flipping your bacon wrapped chicken bites halfway through cooking time, until they have reached desired crispiness.
