How to Make Sweet Spicy Bites in a Crock Pot

Aunt Lou here.

Have any of y’all tried the Crock Pot Bacon Wrapped Chicken Bites recipe? If you have, I bet you love these amazing little appetizers as much as we do around here. One reader, Donna G. said she added chili powder to the recipe to give them a sweet and spicy flavor. That caught my interest, so I knew I had to give it a try! Thank you Donna! This is an amazing adaption of the original recipe!

This is a really simple recipe folks! I used chicken tenders to make the prep work go a little faster. I cut my tenders in thirds or in half so I could make the total number of chicken pieces equal the number of bacon pieces I had. The most time consuming part of this recipe is wrapping up your chicken pieces with your half slices of bacon. All in all, I had this recipe ready to go in less than 10 minutes. As most of you know, I am so slow at prepping a recipe it is almost comical. So, for me to get it ready that fast, you know you can get it done quickly and easily!

Ingredients

  • 16 oz pkg bacon sliced in half andย divided
  • 2.5 lbs boneless, skinless chicken cut into equal pieces to match the number of bacon half slices you have
  • 1 cup brown sugar packed
  • 1 tablespoon chili powder

Instructions

  • Cut your bacon slices in half, set aside
  • Cut your chicken breasts into bite size pieces (I cut my chicken into 32 pieces because my pkg of bacon had 16 slices, which I cut in half, giving me 32 pieces of bacon to use)
  • Wrap one half piece of bacon around a piece of chicken and place in the bottom of a 6-quart slow cooker. Repeat with all of your chicken and bacon pieces
  • Mix together brown sugar and chili powder in a small bowl
  • Sprinkle your brown sugar mixture evenly across the top of your bacon wrapped chicken bites
  • Cover and cook on low for 1.5-2 hours (use a meat thermometer to ensure that your chicken is cooked to the proper temperature without overcooking it)
  • Place your bacon wrapped chicken on a foil lined baking pan, drizzle juices from crock pot over top of all of them and broil on high for 2-3 minutes, watching continually, to crisp up the bacon a bit
  • Use cooking juices as a dip for your Sweet Spicy Bites
