Put 1 large egg in a medium mixing bowl and beat with a fork or small whisk.
Add 1 cup Sugar, 1 teaspoon vanilla extract and 1 cup creamy peanut butter to the egg and stir until completely combined.
Spray your hands with cooking spray, roll dough into 1 inch balls and place evenly on a parchment paper lined cookie sheet.
Dip a fork into a cup of warm water and press the fork into the dough twice to make a crisscross pattern.
Bake for 10 minutes, turning the cookie sheet halfway through the baking time, if your oven does not cook evenly.
Let cookies cool on the baking sheet before removing with a flipping spatula.
Repeat baking steps for the remainder of your cookie dough.
After completely cooling, store cookies in an airtight container.
