Place your cubed chicken and pineapple chunks in a 2-3 quart slow cooker.
In a small bowl, mix together soy sauce, garlic, brown sugar, honey and ground ginger until well combined.
Pour your mixture over everything.
Cover and cook on low for 2.5-3 hours or high for 1 hour 15 minutes-1 hour 30 minutes, stirring halfway through cooking.
If your slow cooker isn't already on high, turn it on high.
Mix together your corn starch and cool water in a small bowl.
Stir the corn starch mixture into your slow cooker and stir frequently for about 10 minutes, until your sauce has thickened up.
Serve chicken, pineapple and sauce spooned over a bed of prepared rice.
