Brown 1 lb ground beef with 2 cloves minced garlic and drain.
Place 4 medium Russet Potatoes (washed and sliced thin) in the bottom of a slightly greased 6-quart crock pot.
Spread the ground beef evenly on top of the potato slices.
Sprinkle 1 oz packet taco seasoning on top of everything.
Spoon 10.5 oz Can Cheddar Cheese Soup evenly on top.
Sprinkle 1 cup Shredded Cheddar Cheese evenly across the top of the everything.
Gently pour 1 cup Beef Broth evenly around your crock pot
Cover and cook on low for 5-6 hours or high for 2.5-3 hours. Halfway through the cooking time, stir everything well and sprinkle 1 cup Shredded Cheddar Cheese on top before covering again for the rest of the cooking time.
