When making this Beefy Potato Crock Pot Taco Casserole recipe, I made the prep so much easier with my mandoline slicer. By using a mandoline slicer, you can have thin and uniform slices, so that everything will cook evenly.

If you are looking to save some money, you can substitute ground turkey for the ground beef. It is a 1 to 1 substitution. You can also use generic brand items for all of the ingredients you can find a generic for. However, the cheddar cheese soup, I look for sales and stock up when I can get them at a discount.

What You Will Need for Beefy Potato Crock Pot Taco Casserole

Ingredients Needed

  • 1 lb ground beef
  • 2 cloves minced garlic
  • 1 oz taco seasoning packet
  • 10.5 oz can cheddar cheese soup
  • 3 medium russet potatoes, washed and sliced thin
  • 2 cups shredded cheddar cheese, divided
  • 1 cup beef broth

  • Prep Time: 10 to 15 minutes
  • Cooking Time: 5 to 6 hours on low or 2 hours and 30 minutes to 3 hours on high, stirring halfway through the cooking time

Ingredients

Instructions

  • Brown 1 lb ground beef with 2 cloves minced garlic and drain.
  • Place 4 medium Russet Potatoes (washed and sliced thin) in the bottom of a slightly greased 6-quart crock pot.
  • Spread the ground beef evenly on top of the potato slices.
  • Sprinkle 1 oz packet taco seasoning on top of everything.
  • Spoon 10.5 oz Can Cheddar Cheese Soup evenly on top.
  • Sprinkle 1 cup Shredded Cheddar Cheese evenly across the top of the everything.
  • Gently pour 1 cup Beef Broth evenly around your crock pot
  • Cover and cook on low for 5-6 hours or high for 2.5-3 hours. Halfway through the cooking time, stir everything well and sprinkle 1 cup Shredded Cheddar Cheese on top before covering again for the rest of the cooking time.

    This is one of our favorites! I made it Sunday and we have leftovers for tonight. I used 1 can of the cheddar soup and 1 whole jar of cheese sauce from Walmart. (The one located in the chips section, their brand.) It was SO good!
