This recipe is just wonderful and checks all the boxes. It is easy to make, tastes and smells great and cooks quickly. The ingredients for this Cheesy Beefy Crock Pot Potato Casserole are mostly budget friendly. I have made this recipe with generic cream of celery soup, store brand American cheese and a cheaper ground beef (not the leanest) to help keep the cost down. You can generally get potatoes pretty inexpensively, and you will still have some leftover to make side dishes for other meals.

What You Will Need for Cheesy Beefy Crock Pot Potato Casserole
Ingredients Needed
- 1 lb ground beef, cooked and drained
- 4 russet potatoes, washed and sliced thin
- 1/3 cup white onion, diced
- 7 slices American cheese, torn into pieces, divided
- 10.5 oz can of cream of celery soup
Equipment Needed
- Skillet and strainer or micro cooker
- Meat chopper
- Sharp knife
- Cutting board
- Mandonline slicer
- Cut resistant food grade gloves
- Safety can opener
- Spoon or small stirring spatula
- 4 Quart Crock Pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 3 hours and 30 minutes to 4 hours on low or 1 hour and 45 minutes to 2 hours on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly

Cheesy Beefy Crock Pot Potato Casserole
Ingredients
- 1 lb ground beef cooked and drained
- 4 medium Russet Potatoes washed and sliced thin
- 1/3 cup white onion diced
- 7 slices American cheese torn into pieces, divided
- 10.5 oz can cream of celery soup
Instructions
- Lightly spray a 4 Quart Crock Pot with cooking spray.
- Put half of the 1 lb ground beef (browned and drained) in the bottom of the insert.
- Top with half of 1/3 cup white onion (diced) and 4 medium Russet Potatoes (washed and sliced thinly).
- Tear half of the 7 slices American cheese into pieces and place evenly on top of everything.
- Repeat layering.
- Spread 10.5 oz can cream of celery soup evenly on top of everything.
- Cover and cook on low for 3 hour and 30 minutes – 4 hours or on high for 1 hour and 45 minutes – 2 hours (the potatoes should reach desired tenderness and the cheese bubbly).
Notes
- This recipe could easily be doubled and put in a larger crock pot if you need more servings
