Ingredients
8slicesbreadI used sliced brioche bread, and it worked beautifully.
1/2cupunsalted buttersoftened until it is very soft (You want it soft enough to be creamy when mixed in.)
1tablespoongrated parmesan cheeseYou want to use the kind that is in the shaker that is put on top of pizza.
Preheat your 22 inch Blackstone griddle on low with the griddle press on top of it (preheating with the press on top of the griddle will preheat the press at the same time).
In a small mixing bowl, combined a very softened 1/2 cup unsalted butter, 1 tablespoon grated parmesan cheese, 1 teaspoon garlic powder and 1/2 teaspoon Italian Seasoning until smooth.
Spread the butter mixture over one side of each of the 8 slices bread and lay them out on a large baking sheet or a piece of aluminum foil.
Divide the 8 slices of buttered bread, 8 slices mozzarella cheese and 24 slices pepperoni into four sandwiches. (Each sandwich is assembled as follows: a slice of bread butter side down, a slice of mozzarella, 6 slices of pepperoni, a slice of mozzarella and 6 slices of pepperoni topped with a slice of bread butter side up.)
Place the griddle press on top of all 4 sandwiches and let it cook 1.5-2 minutes.
Lift the griddle press, and check to see if the first side has reached the desired browning. If so, flip the sandwiches and place the griddle press back on top of the sandwiches. If not, let them cook for 20-30 seconds before checking them again and reaching desired browning.
After the griddle press is placed back on top of the sandwiches that have been flipped, let them cook for an additional 1-2 minutes, until the second side has reached desired browning.
Serve while warm with pizza sauce for dipping, if desired.
