While your bacon is cooking, cut 2 lbs boneless skinless chicken into bite size pieces and place in a 6 Quart Slow Cooker.
Sprinkle the bacon crumbles on top of the chicken.
Add 1/2 cup chopped onion, 15 oz can pork and beans (undrained), 15.5 oz can chili beans (undrained), 15.5 oz can kidney beans (drained), 15.5 oz can cannellini beans (drained), 1/4 cup ketchup, 1/2 cup barbecue sauce, 1/4 cup brown sugar, 1/4 cup molasses, 2 tablespoons Yellow Mustard, 1 tablespoon chili powder, 1 teaspoon garlic salt and 1 teaspoon Montreal steak seasoning or pepper to the insert and stir until well blended.
Cover and cook on low for 5-6 hours or high for 2.5-3 hours, stirring halfway through the cooking time, if possible, to help the cubed chicken cook evenly.
