I was first introduced to cowboy beans when I was a kid. We had family that would come visit us every Fall, and cowboy beans were always on the menu. When Cris and I were talking about new recipe ideas, she brought up the idea of making the cowboy beans with chicken, and I was completely on board. So, now you have this delicious Chicken Crock Pot Cowboy Beans recipe to enjoy This dish not only tastes great, it also makes your house smell amazing!
Sidenote: If you do not have time to cook up bacon, Cris has used precooked bacon crumbles in some of her cowboy bean recipes before. I think they would work well for this recipe too.
What You Will Need for Chicken Crock Pot Cowboy Beans
Ingredients Needed
- 2 lbs boneless, skinless chicken, cut into bite size pieces
- 1/2 lb bacon, cooked crisply and crumbled
- 1/2 cup chopped onion
- 15 oz can pork and beans, undrained
- 15.5 oz can chili beans, undrained
- 15.5 oz can kidney beans, drained
- 15.5 oz can cannellini beans, drained
- 1/4 cup ketchup
- 1/4 cup bbq sauce
- 1/4 cup brown sugar, packed
- 1/4 cup molasses
- 2 tablespoons mustard
- 1 tablespoon chili powder
- 1 teaspoon garlic salt
- 1 teaspoon Montreal steak seasoning
Equipment Needed
- Sharp knife
- Cutting board
- Skillet or griddle
- Tongs
- Measuring cups
- Small stirring spatula
- Measuring spoons
- Safety can opener
- Can colander
- 6 Quart Crock Pot
Time Needed
- Prep Time: 15 to 20 minutes
- Cooking Time: 5 to 6 hours on low or 2 hours and 30 minutes to 3 hours on high, stirring the chicken and beans halfway through the cooking time, if possible, to help the chicken cook evenly

Chicken Crock Pot Cowboy Beans
Ingredients
- 2 lbs boneless skinless chicken cut into cubes
- 1/2 lb bacon cooked crisply and crumbled
- 1/2 cup chopped onion
- 15 oz can pork and beans undrained
- 15.5 oz can chili beans undrained
- 15.5 oz can kidney beans drained
- 15.5 oz can cannellini beans drained
- 1/4 cup ketchup
- 1/2 cup barbecue sauce
- 1/4 cup brown sugar packed
- 1/4 cup molasses
- 2 tablespoons Yellow Mustard
- 1 tablespoon chili powder
- 1 teaspoon garlic salt
- 1 teaspoon Montreal steak seasoning or pepper
Instructions
- Cook 1/2 lb bacon crisply and crumble.
- While your bacon is cooking, cut 2 lbs boneless skinless chicken into bite size pieces and place in a 6 Quart Slow Cooker.
- Sprinkle the bacon crumbles on top of the chicken.
- Add 1/2 cup chopped onion, 15 oz can pork and beans (undrained), 15.5 oz can chili beans (undrained), 15.5 oz can kidney beans (drained), 15.5 oz can cannellini beans (drained), 1/4 cup ketchup, 1/2 cup barbecue sauce, 1/4 cup brown sugar, 1/4 cup molasses, 2 tablespoons Yellow Mustard, 1 tablespoon chili powder, 1 teaspoon garlic salt and 1 teaspoon Montreal steak seasoning or pepper to the insert and stir until well blended.
- Cover and cook on low for 5-6 hours or high for 2.5-3 hours, stirring halfway through the cooking time, if possible, to help the cubed chicken cook evenly.
