This Crock Pot Beefy Tomato Mach Casserole for Two recipe is adapted from one of Michael’s favorite childhood recipes that was frequently served at potlucks. You know that it is good, if it is a frequent dish at potlucks that is completely eaten. I understand why it was at a bunch of potlucks. It tastes great, and it is super easy to put together. That’s a win, win in my book, so I figured I should convert it into a two serving recipe. That way more people can enjoy this delightful recipe.

What You Will Need for Crock Pot Beefy Tomato Mac Casserole for Two
Ingredients Needed
- 1/2 lb lean ground beef
- 3/4 cup macaroni, cooked al dente (The measurement is done before cooking.)
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon diced onion
- 8 oz can tomato sauce
- 1/2 cup shredded mild cheddar
Equipment Needed
- Sharp knife
- Cutting board
- Skillet and strainer or micro cooker
- Meat chopper
- Saucepan and colander (I love using my on pot strainer for pasta.)
- Wooden spoon
- Measuring spoons
- Safety can opener
- Measuring cup
- 2.5 Quart Casserole Crock Pot or 2 Quart Crock Pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 1 hour and 45 minutes to 2 hours on low or 1 hour on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly

Crock Pot Beefy Tomato Mac Casserole for Two
Ingredients
- 1/2 lb lean ground beef browned and drained
- 3/4 cup macaroni cooked al dente (The measurement is of the dry pasta.)
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon diced onion
- 8 oz Tomato Sauce
- 1/2 cup Shredded Cheddar Cheese (Mild or sharp cheddar can be used in this recipe. It is up to your personal preference.)
Instructions
- Brown and drain 1/2 lb lean ground beef while you cook 3/4 cup macaroni to al dente and drain. (The measurement is of the dry pasta).
- Lightly spray a 2.5 Quart Casserole Crock Pot or 2 Quart Crock Pot with cooking spray and spread out the cooked ground beef in the bottom of the insert.
- Top with your al dente pasta.
- Sprinkle 1/4 teaspoon salt 1/8 teaspoon ground black pepper and 1 tablespoon diced onion on top of the pasta.
- Pour 8 oz Tomato Sauce evenly over the top of the other layers.
- Sprinkle 1/2 cup Shredded Cheddar Cheese on top of everything.
- Cover and cook on low for 1 hour and 45 minutes to 2 hours or high for 1 hour, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly. It is done when the cheese is completely melted.
