While we were on vacation, I needed a recipe that I could throw together quickly. I had the idea for this Crock Pot Chicken and Black Beans and happened to have all the ingredients. So, I gave it a try, and we loved it.
This recipe is so easy to put together. It is a true dump and go recipe that tastes great. The little bit of garlic salt really makes the flavors of the basil pesto and black beans pop. I highly recommend being very generous when spooning the juices over your chicken, black beans and rice. The flavor is just so good.
What’s even better is that on top of being easy and delicious, this recipe is super filling. You have chicken, beans and rice making up this hearty bowl. It is a real tummy filler and crowd pleaser.
What You Will Need for Crock Pot Chicken and Black Beans
Ingredients Needed
- 2.5 lbs boneless, skinless chicken
- 10 oz jar basil pesto
- 15.25 oz can black beans, undrained
- Garlic salt to taste
- Prepared rice
Equipment Needed
- Small stirring spatula
- Can opener
- 4 Quart Slow Cooker
- Two forks
- Large bowl, optional for shredding chicken
- Whatever you need to make your favorite rice
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly
- Additional Time: 5 minutes to shred your chicken

Crock Pot Chicken and Black Beans
Ingredients
- 2.5 lbs boneless skinless chicken thighs
- 10 oz jar pesto basil
- 15.25 oz can black beans undrained
- garlic salt to taste
- Prepared rice
Instructions
- Put your 2.5 lbs boneless skinless chicken thighs in a 4 Quart Slow Cooker.
- Top with 10 oz jar pesto basil, using a small stirring spatula to get it all out of the jar and spread out evenly on top of the chicken.
- Pour your 15.25 oz can black beans evenly across everything.
- Sprinkle garlic salt to taste across the top.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly.
- Shred chicken with two forks either in your crock pot or in a large bowl. If shredding in a large bowl, add chicken back into the crock pot and stir until everything is mixed well.
- Serve your chicken and beans over a bed of Prepared rice with the cooking juices spooned over top.
