I knew I really liked black beans when I made this recipe. Then I made this delicious recipe, and I was in love. I knew I wanted to come up with some more recipes using black beans. These Crock Pot Black Bean Chicken Bowls are next up, and they were a huge hit in my house.

My kids weren’t too sure about this but were good sports and tried a bite. That was all it took. They loved it! When Michael tried it, he said, “Oh my goodness! This is restaurant quality!” If you happen to live near a Kroger or Jay-C store, I highly recommend using their fresh corn tortilla chips from the deli section. They are perfect in this dish. So, in summary, if you want a simple recipe that tastes just as good as something you would pay big bucks for at a restaurant, this is the recipe to try.

What You Will Need for Crock Pot Black Bean Chicken Bowls

Ingredients Needed

  • 2 lbs boneless, skinless chicken thighs, trimmed (or boneless, skinless chicken breasts cut into thigh size pieces if you prefer white meat)
  • 30.5 oz black beans, undrained (2 – 15.25 oz cans)
  • 16 oz jar chunky or restaurant style salsa
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 teaspoon garlic powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon onion powder
  • Shredded lettuce
  • Shredded Mexican style or taco cheese
  • Tortilla chips

Equipment Needed

  • Sharp knife
  • Cutting board
  • Can opener
  • Measuring spoons
  • 6 quart slow cooker
  • Two forks
  • Optional: Large bowl (You can shred the chicken right in the crock pot, but can use a bowl if you prefer.)
  • Slotted spoon for serving

Time Needed

  • Prep Time: 10 minutes or less
  • Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high
  • Additional Time: 5 minutes to shred chicken

Instructions

  • Put 2 lbs boneless skinless chicken thighs in the bottom of a 6 quart slow cooker.
  • Pour your undrained 30.5 oz can black beans on top of your chicken.
  • Top with your 16 oz jar chunky salsa, 3 tablespoons fresh cilantro, 1/2 teaspoon garlic powder, 2 teaspoons ground cumin and 1/2 teaspoon onion powder.
  • Cover and cook 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high. (It is done when your chicken reaches at least 165 degrees Fahrenheit.)
  • Shred your chicken with two forks in your crock pot OR place chicken in a large bowl, shred with two forks and return shredded chicken to crock pot.
  • Stir until everything is well combined.
  • Make a bed of Tortilla chips topped with Shredded lettuce and use a slotted spoon to put your black bean and chicken mixture on top before sprinkling on some Shredded Mexican Blend Cheese.
