How to Make Salsa Chicken Soup in a Crock Pot

I was going through some of our recipes the other day, and I came across a comment on the Creamy Salsa Crock Pot Chicken recipe Cris made a while back. The reader said they would want to make it into a soup. I thought that was a fantastic idea and gave it a try. Now you have this incredible Crock Pot Salsa Chicken Soup. It is filling and delicious!
Around my house, we usually like thicker soups. So, by not draining the cans of beans or corn, there was plenty of liquid for our taste with the cooking juices from the chicken. However, if you want a thinner soup, you could always add in some chicken broth.
Now, I will have an upset 10 year old if I do not include this next part. Ryder said I had to tell you that if you like shredded cheddar, you should definitely sprinkle some on top because it really added to the soup. I happen to agree with my budding chef!
What You Will Need for Crock Pot Salsa Chicken Soup
Ingredients Needed
- 2.5 lbs chicken tenders
- 16 oz jar salsa (You can choose your favorite salsa in whatever heat best suits your preferences.)
- 30 oz black beans (2 – 15 oz cans), undrained
- 11 oz can mexicorn, undrained
- 8 oz block cream cheese, softened
- 1 taco seasoning packet
- 10.5 oz can cheddar cheese soup
- White rice, prepared
- Optional: Shredded cheddar cheese to sprinkle on top of servings
Equipment Needed
- Can opener
- Large bowl and hand mixer or stand mixer
- Stirring spatula
- 6 quart slow cooker
- Whatever you need to prepare your favorite kind of white rice
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 3 to 4 hours on low or 1.5 to 2 hours on high, stirring halfway through cooking
- Shredding of Chicken: 5 minutes

Crock Pot Salsa Chicken Soup
Ingredients
- 2.5 lbs Chicken Tenders raw
- 16 oz jar salsa (You can choose your favorite salsa in whatever heat best suits your preferences.)
- 30 oz can black beans (2 – 15 oz cans) undrained
- 11 oz Can Mexicorn undrained
- 8 oz cream cheese softened
- 1.25 oz Taco Seasoning Packet
- 10.5 oz Can Cheddar Cheese Soup
- Cooked Rice
- Shredded Cheddar Cheese garnish, if desired
Instructions
- Layer chicken tenders in the bottom of your 6 quart crock pot.
- Pour your salsa, beans (undrained) and corn (undrained) on top of everything.
- In a mixer, mix together cream cheese, soup and taco seasoning until well blended.
- Slather mixture on top of everything and place lid on top, keeping the cream cheese mixture from touching the sides of the insert.
- Cook on low for 3-4 hours or high for 1.5-2 hours, stirring halfway through cooking.
- Once your chicken is done, take two forks and shred your chicken tenders.
- Stir everything together until well blended.
- Place desired amount of cooked rice in a bowl, spoon soup over top of rice, stir and sprinkle shredded cheddar cheese on top, if desired.
