When one gives you salsa, you simply must make salsa chicken. It is a rule. And, a very GOODe rule ;). So I grabbed one of my favorite crock pots— my trusty casserole crock– and got down to business.
Creamy Salsa Crock Pot Chicken
I started out with chicken tenders in the bottom of my crock pot and added a jar of Salsa Me Krazy’s Mild Salsa. Then I added some beans and mexicorn. When it came to the creamy sauce, I took a tip from my very popular Angel Chicken and whipped my cream cheese with my soup and seasonings before cRockin’ with my mixer. That tiny step makes a big difference in your sauce. Trust me ;).
I then threw the lid on and cooked on low for 2-3 hours– the perfect amount of time for me to run a couple errands and come home to dinner instead of running through the drive-thru.

One of the great things about this recipe is how versatile it is and how easy it is to repurpose the leftovers. We love to enjoy it three different ways– simply over rice or as incredible soft tacos or over a bed of nachos.
Creamy Salsa Crock Pot Chicken Recipe

Creamy Salsa Crock Pot Chicken is simple and so satisfying! The leftovers are very versatile. Serve over rice, as tacos or even over nachos!
Ingredients for Creamy Salsa Crock Pot Chicken
- 3 lbs Chicken Tenders
- 1 15.5 oz Jar Salsa Me Krazy Salsa
- 2 15 oz Cans of Beans of Your Choice (I used Black and Northern) Drained and Rinsed
- 1 11 oz Can Mexicorn
- 1 8oz Package Cream Cheese- Softened
- 1 1.25 oz Taco Seasoning Packet
- 1 10 oz Can Fiesta Nacho Cheese Soup
- Garnish- Shredded Cheese, Salsa Me Krazy Salsa, Sour Cream
- Optional- Cooked Rice
How to Make Creamy Salsa Chicken in a Slow Cooker
- Layer Chicken Tenders in the bottom of your slow cooker
- Pour Salsa Me Krazy Salsa on top.
- Add beans and corn.
- In a mixer, mix together cream cheese, soup and taco seasoning until well blended.
- Slather mixture on top of casserole and place lid on top.
- Cook on low for 1-3 hours until chicken is tender and juicy.
- Mix well before serving over rice, in tacos or over nachos.

- 30 oz Beans of Your Choice (2 – 15 oz cans – I used Black and Northern) Drained and Rinsed
- 11 oz Can Mexicorn
- 8 oz Package Cream Cheese- Softened
- 1.25 oz Taco Seasoning Packet
- 10 oz Can Fiesta Nacho Cheese Soup
- Garnish- Shredded Cheese Salsa Me Krazy Salsa, Sour Cream
- Optional- Cooked Rice
Instructions
- Layer Chicken Tenders in the bottom of your slow cooker
- Pour Salsa Me Krazy Salsa on top.
- Add beans and corn.
- In a mixer, mix together cream cheese, soup and taco seasoning until well blended.

- Cook on low for 1-3 hours until chicken is tender and juicy.

Notes
- Like I mentioned before, I used one of my casserole crock pots for this recipe. The recipe filled the 3 1/2 quart 9 x13 crock all the way, so you could probably get away with using a 5 or 6 qt slow cooker with this recipe if you need to, you will just need to watch your time and check often. My guess is the chicken could be done as early as 1 1/2 hours in a large size crock.
