When I first branched out on my own, I was terrified to cook. Even when preparing something like Hamburger Helper or boxed scalloped potatoes, I was scared I was going to mess it up. (Who says God doesn’t have a sense of humor in turning me into a food blogger! 😉 )
I actually REALLY like cheesy scalloped potatoes from a box, so I gladly picked up a box of my old favorite for this recipe!
Country Ham Potato Casserole
If you haven’t figured it out by now, I am all about easy recipes. I’m like everyone else; busy doesn’t even begin to describe some days around here! So I need recipes that will balance out all my needs: I need it quick, within budget and yummy. With this recipe, I can check off all three! Woohoo!
Country Ham Potato Casserole {Crock Pot}
Ingredients
- 2 c cooked ham diced
- 2 c milk
- 1 c boiling water
- 10.75 oz can Cheddar cheese soup
- 7.8 oz pkg cheesy scalloped potato mix unprepared
- 22 oz sweet corn & diced peppers (2-11 oz cans) drained
Instructions
- Spray your crock pot with cooking spray
- Pour all of your ingredients into your crock pot and mix well
- Cover and cook on low for 6-8 hours, stirring occasionally

what can I use instead of your cheeses potatoes not in Aust .

You could possibly use a box of Au Gratin Potatoes. It would alter the taste a little, but I think it would still work! Enjoy!

My grocery store didn’t offer a 7.8 oz package of cheesy potatoes. The largest I could find is 5 oz. I’ll see what happens.

I am pretty sure you can. However, I haven’t tried it so I can’t say other than to cook it on 350 and check it often to figure out the time. Enjoy!
