Aunt Lou here.

When I first branched out on my own, I was terrified to cook. Even when preparing something like Hamburger Helper or boxed scalloped potatoes, I was scared I was going to mess it up. (Who says God doesn’t have a sense of humor in turning me into a food blogger! 😉 )

I actually REALLY like cheesy scalloped potatoes from a box, so I gladly picked up a box of my old favorite for this recipe!

Slow Cooker Recommendation

I whipped this yummy Country Ham Potato Casserole recipe up in my new 6 Quart Crock Pot with Ceramic Coated Pot. I am in love with this crock pot…I think I will call her Cera. 😉 Look out Sir Hamilton, Cera is coming for your position as my favorite! She was so easy to clean and lightweight and cooked so evenly!

      Hi Margaret!

You could possibly use a box of Au Gratin Potatoes. It would alter the taste a little, but I think it would still work! Enjoy!

My grocery store didn’t offer a 7.8 oz package of cheesy potatoes. The largest I could find is 5 oz. I’ll see what happens.

This sounds really good. I was just wondering if it
could be cooked in the oven? If so how could one do
    it? Thanks.

      Hi Ed!

I am pretty sure you can. However, I haven’t tried it so I can’t say other than to cook it on 350 and check it often to figure out the time. Enjoy!

      Hi Lisa!

I haven’t tried this with cooked chicken, but think it could work. If you give it a try, let me know how it turns out!
