How to Make Cheesy Potatoes in a Crock Pot

One of my favorite sides is cheesy potatoes. I can remember getting so excited every time Momma made them when I was a kid. So creamy and delicious. It combined two of my favorite foods…potatoes and cheese! I couldn’t think of a better way to eat my vegetables!
Fast forward to now.
I was in the mood for some of Momma’s Cheesy Potatoes, but had never made them before. Every time I need to get a recipe from Momma, it is an adventure. I don’t think the woman has ever really used a measuring cup…she just KNOWS. She can pour ingredients together and knows by the look of them when she has enough. I am in awe of her. (I had the same problem getting a measurable recipe for her French Toast, but after years of trial and error, I finally got it down!)
However, she reluctantly gave me approximate measurements for the ingredients on this recipe and was dead on. They were delicious! They got the “eyebrow raise-mmmm!” combo from Michael, so I knew I had hit the nail on the head. Yay!
Michael was also pleased that I used onions like Momma said to do. Don’t get me wrong, I LOVE the flavor of onions. I just have an aversion to dicing onions (or even going near one with a knife) since it usually sends me running from the kitchen with my eyes on fire and watering. Somehow this time I avoided the burning, watering and if I’m completely honest usually screaming and/or crying! Shew! I just wish I knew how I did it so I could repeat this stroke of luck!
What You Will Need for Crock Pot Cheesy Potatoes
Ingredients Needed
- 6 medium potatoes, peeled and sliced
- 1/3 cup diced onion
- 8 oz Velveeta (1/4 of a 32 oz block), cubed
- 1 cup milk
- Salt and pepper to taste
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Measuring cup
- Medium pot
- Colander
- Stirring spatula
- 2.5 quart crock pot
Time Needed
- Prep Time: 15 to 20 minutes
- Cooking Time: 2 hours

Cheesy Potatoes {Crock Pot}
Ingredients
- 6 medium potatoes peeled and sliced
- 1/3 cup onion diced
- 8 oz Velveeta (1/4 of a 32 oz block) cubed
- 1 cup milk
- salt and pepper to taste
Instructions
- Put your water on the stove to boil.
- Add your sliced potatoes and diced onion to boiling water and boil for approximately 7-10 minutes until potatoes are fork tender and drain
- Place your drained potatoes and onions in your lightly greased 2.5 quart crock pot.
- Add your cubed cheese on top of the potatoes.
- Pour in your milk.
- Add salt and pepper to taste.
- Cover and cook on low for 2 hours.
- Stir until well combined and serve.

Is there a way to do this with a block of cheese instead of velveeta? It looks delicious but I don’t tend to buy velveeta cheese.
I haven’t tried this with a block of cheese. The Velveeta makes it a creamy sauce. With another cheese, the consistency will probably be quite different. If you give it a try, let me know how it goes!
