As you know, I have always loved Momma’s Cheesy Crock Pot Potatoes. The other day I was brain storming for recipe ideas, and this recipe came to mind. Then I thought, “Hey! Garlic would be great with this recipe!” So now you have this amazing side dish that is a cheese lover’s dream! I love the extra touch of flavor the garlic adds to Momma’s classic recipe!

This recipe is a shorter recipe for the crock pot cooking time. That is because you are cooking your potatoes on the stove first. Yes, it is an extra step. However, this makes it so you can make this recipe in a much shorter time period than if you were cooking your potatoes in your crock pot. I am so not a morning person. So, having a recipe I can put on in the afternoon and still have ready by dinner time is big plus for me!

My entire family was raving about these yummy potatoes, from my youngest child to my husband (otherwise known as my oldest child ๐Ÿ˜‰ ). I can’t wait for you and your loved ones to try this recipe and enjoy it as much as we do!

What You Will Need

Ingredients Needed

  • 6 potatoes, peeled and sliced
  • 3 cloves garlic, minced
  • 1/3 cup onion, diced
  • 8 oz Velveeta (1/4 of a 32 oz block), cubed
  • 1 cup milk
  • salt and pepper to taste

Equipment Needed

  • Vegetable peeler
  • Sharp knife
  • Cutting board
  • Garlic press (If you do not have a garlic press, you can mince your garlic with your sharp knife.)
  • Measuring cups
  • Stirring spatula
  • 4 quart slow cooker

Time Needed

  • Prep Time: Approximately 20 minutes
  • Cooking Time: 1.5 to 2 hours on low, stirring as needed

Ingredients

Instructions

  • Put your water on the stove to boil
  • Peel and slice potatoes
  • Dice your onion
  • Add potatoes and onion to boiling water and boil for approximately 10 minutes until potatoes are almost fork tender and drain
  • Mince your garlic
  • Lightly spray your crock pot
  • Place your drained potatoes and onions in your 4 quart crock pot
  • Add your cubed cheese and garlic on top of the potatoes
  • Pour in your milk
  • Salt and pepper to taste
  • Cover and cook on low for 1.5- 2 hours, stirring as needed
  • Stir one more time at the end until well combined
