Do I have a treat for you! This 7 Can Crock Pot Chicken Tortilla Soup recipe is quite possibly the easiest recipe for this kind of soup that you will ever see. What makes it even better is that the soup is incredibly flavorful and wonderfully delicious! I am positive this will make it onto your “go to recipes” list.
So how good is this recipe? The day after we had this recipe for the first time, I offered to make one of my kiddos’ favorite meals. They requested the leftovers from this soup instead of their favorite meal. My jaw dropped. I knew they liked this soup from their reactions the night before, but for them to turn down one of their favorite meals? That was impressive!
This recipe is great for a nice dinner at home with your family. As evidenced by my family, young and old alike will love this delicious soup. That means it will also work well when you need to bring something to a potluck dinner to share with a larger group!
What You Will Need
Ingredients Needed
- 28 oz can chicken, drained
- 15 oz can black beans, undrained
- 2 – 10 oz cans tomatoes with chiles, undrained
- 15 oz can mexi-corn, undrained
- 16 oz jar salsa (We used mild, but you can use whatever style you would like.)
- 14.5 oz can chicken broth
- 1 oz taco seasoning packet
- Garnish (if desired): crushed tortilla chips, shredded Mexican-style cheese, sour cream
Equipment Needed
- Can opener
- Two forks
- Wooden spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high

7 Can Crock Pot Chicken Tortilla Soup
Ingredients
- 28 oz can chicken drained
- 15 oz can black beans undrained
- 20 oz diced tomatoes with green chiles (2 – 10 oz cans) undrained
- 15 oz Can Mexicorn undrained
- 16 oz Salsa
- 14.5 oz can chicken broth
- 1 oz taco seasoning
- crushed tortilla chips, shredded Mexican-style cheese, sour cream garnished, if desired
Instructions
- Place chicken in a 6 quart slow cooker and break into bite size pieces with two forks.
- Add remaining ingredients and stir until well combined.
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
- If desired, serve with crushed tortilla chips, shredded Mexican-style cheese and/or sour cream.

My family loved it! I did accidentally add a can of plain corn in addition to the mexi-corn and I added an extra can of petite diced tomatoes.
I’ve tried it with chicken and with ground beef. Personally, I prefer it made with ground beef.
