Are you looking for a great recipe that you can cook all day long and come home to? Our Crockpot Chicken Tortilla Soup has a special secret that gives you an awesome all day flavor without drying out your chicken!
Cris here. You might recall that yesterday I shared a recipe that was great for those days when you are short on time– BBQ Chicken Flatbreads using Tyson® Grilled and Ready® Chicken Breast Strips. Well, today I am partnering with them again to share with you a great recipe (and tip) for those days when you are going to be away from home ALL DAY and need a recipe that can handle the heat of the slow cooker for 10 hours.
One of the most common frustrations I hear from readers is that their slow cookers cook too hot these days. It is true that slow cookers cook hotter and are typically bigger (making food cook faster) than their predecessors many moons ago. Low is too hot to cook all day for a lot of recipes and the warm setting has ruined many a dinner. This usually leaves you with two choices with the newer models: cook something to death and ruin flavor and texture or find a handful of those all day recipes that can handle it, but that usually leaves chicken breast out of the picture because it is by far one of the faster cooking meats in the slow cooker.
But oh dear reader have I figured out a solution that I am just tickled over! These Chicken Breast Strips are perfect for many crock pot recipes that call for chicken breast and depending on what your recipe involves many times you can just stir your chicken in at the end and it comes out perfect.
Crockpot Chicken Tortilla Soup {All Day}
Our Crockpot Chicken Tortilla Soup is a great example. We LOVE all the yummy flavors of this soup, but if we used regular chicken breasts in the soup, it could easily be done in 4-5 hours even on low. But if we cook all the soup flavors together all day and then add the frozen strips in the last hour or thawed strips in during the last half-hour, the tender juicy chicken picks up all that great flavor and doesn’t dry out one bit!
Where to Buy
A lot of times people ask me where to find products at their store. I found Tyson® Grilled and Ready® Chicken Breast Strips at my local Walmart in the frozen cooked chicken section.
Slow Cooker Recommendations
This soup will nicely fill a 6 qt slow cooker. Our stirring crock pot would be especially nice to use if we are going to be gone all day, however it isn’t necessary. I actually used this 6 qt model because I am in love with the non-stick surface of its ceramic coated pot. Any 6 quart slow cooker will do.

Not a bad recipe at all. 2d time I made it, I left out the water and didn’t drain the beans or the corn and there was plenty of liquid.
Also, skinless chicken works well. Before serving the soup, pull out the chicken pieces, de-bone and shred, stir back in and serve.
I think the 2d and subsequent of these soups were more “hearty” than the original.
