Put your diced 1/4 cup yellow onion, 15.5 oz can chili beans (undrained), 15.25 oz can black beans (undrained), 15.25 oz can corn (undrained), 20 oz cans diced tomatoes with green chiles (undrained), 8 oz can tomato sauce, 12 oz can beer or non-alcoholic beer and 1 oz pkg taco seasoning mix in your 6 quart crock pot and mix well.
Place 2.5 lbs boneless, skinless chicken thighs on top and gently stir them in with everything else.
Cover and cook on low for 4-5 hours or high for 2-2.5 hours, stirring halfway through the cooking time.
Once your chicken is completely cooked, shred your chicken with two forks in your crock pot or in a large bowl.
Stir the shredded chicken in with the rest of the soup.
Serve topped with shredded Cheddar cheese, tortilla chips and/or sour cream, if desired.
