How to Make Chicken Taco Soup in a Crock Pot

When I first made this Chicken Crock Pot Taco Soup, I used chicken breasts. This time I made it with chicken thighs, and it worked really well. It makes the cooking time a little shorter but still tastes great. So, now you can make this delicious soup with whatever cut of meat you like best.

This recipe is so easy to prepare. You just have to dice, dump, stir and cook. At the end, you just have to shred the chicken with a couple forks, and you are done. This is a recipe I wish I had when I was trying to start cooking. It is simple to make while still being delicious. It would have been perfect to give me more confidence in the kitchen. As someone who is comfortable in the kitchen, I also love this recipe for times when I don’t want to spend too much time in the kitchen.

What You Will Need for Chicken Crock Pot Taco Soup

Ingredients Needed

  • 1/4 cup yellow onion, diced
  • 15.5 oz can chili beans, undrained (I used mild chili beans, but you can use hot chili beans if you prefer them.)
  • 15.25 oz can corn, undrained
  • 15.25 oz can black beans, undrained
  • 20 oz can diced tomatoes with green chilies, undrained (2 – 10 oz cans)
  • 8 oz can tomato sauce
  • 12 oz can beer
  • 1 taco seasoning packet
  • 2.5 lbs boneless, skinless chicken thighs
  • Optional garnish: tortillas chips, shredded cheddar cheese, sour cream

Equipment Needed

  • Sharp knife
  • Cutting board
  • Can opener
  • Stirring spatula
  • 6 quart slow cooker
  • Large bowl (Optional: If you would prefer to shred your chicken in your crock pot, you will not need the bowl.)
  • Two forks

Time Needed

  • Prep Time: 7 minutes
  • Cooking Time: 4 to 5 hours on low or 2 to 2 hours and 30 minutes on high, stirring halfway through the cooking time
  • Additional Time Needed: 5 to 10 minutes to shred chicken

  • Put your diced 1/4 cup yellow onion, 15.5 oz can chili beans (undrained), 15.25 oz can black beans (undrained), 15.25 oz can corn (undrained), 20 oz cans diced tomatoes with green chiles (undrained), 8 oz can tomato sauce, 12 oz can beer or non-alcoholic beer and 1 oz pkg taco seasoning mix in your 6 quart crock pot and mix well.
  • Place 2.5 lbs boneless, skinless chicken thighs on top and gently stir them in with everything else.
  • Cover and cook on low for 4-5 hoursย or high for 2-2.5 hours, stirring halfway through the cooking time.
  • Once your chicken is completely cooked, shred your chicken with two forks in your crock pot or in a large bowl.
  • Stir the shredded chicken in with the rest of the soup.
  • Serve topped with shredded Cheddar cheese, tortilla chips and/or sour cream, if desired.
