Mix together all the ingredients except sour cream and gnocchi in your 4 quart crock pot.
Cook on low for 6-8 hours or until beef is tender.
Turn your slow cooker up to high, stir in sour cream and gnocchi until sour cream is well combined with the rest of the gravy and cook for additional 10-15 minutes, until gnocchi reaches desired tenderness.
