Place 6 medium gold potatoes that have been cut into chunks in the bottom of your 6 quart crock pot.
Top with 1 small yellow onion, chopped
Add 2 lb cubed ham (or 2lbs of leftover ham cut into bite size pieces), 60 oz Italian Cut Green Beans, undrained, and 1 cup vegetable broth.
Sprinkle with salt & pepper to taste and red pepper to taste.
Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring halfway through cooking time, if possible. It is done when the potatoes have reached desired tenderness.
