Place 8 Roma Tomatoes (whole), 10 oz grape tomatoes, 2 sweet onions roughly chopped, 1 red bell pepper roughly chopped, 1 green bell pepper roughly chopped, 1 tablespoon garlic minced and 28 oz crushed tomatoes in a 4-6 quart slow cooker.
Cover and cook on low for 6-8 hours or high 3-4 hours until veggies are tender..
In batches, blend cooked ingredients until salsa reaches desired consistent. (It will blend quickly, so check it every few seconds.)
Stir in the juice from 1/2 lime, cliantro (to taste) and salt to taste. Then serve with tortilla chips.
