Place 14.5 oz can peach slices in syrup (drained), 1/2 Cup Brown Sugar and 2 teaspoons Cinnamon in a heat safe bowl that will fit in your insert and mix well.
Add 1 Cup Steel Cut Oats, 1 1/2 Cups Skim Milk, 1 1/4 Cups Water and 1 teaspoon Vanilla and stir well.
Evenly dollop 6 Tablespoons Whipped Cream Cheese on top.
Place the bowl in the insert of a 6 Quart Crock Pot.
Pour additional water into the crock pot insert (outside the bowl) until it reaches halfway up the outside of the bowl.
Cover the crock pot and cook on low for 8 hours, stir well and serve.
